This sparkling features a rich, earthy full-bodied palate with loads of berry and spice flavours.
The fruit was handpicked and chilled overnight before whole bunch pressing to minimise phenolic pickup. Fermentation was carried out in stainless steel tanks at 15°C. Once primary fermentation completed and the base wine fined and filtered, the second in-bottle fermentation is conducted. The bottled wines are left on lees for 12 months before disgorging and topping.
Great pairing with chocolate and sweet deserts. Try a traditional Christmas approach with turkey and cranberry sauce.
The sparkling shiraz is non-vintage as we hold back small amounts of previous vintages to blend into the main vintage to give the sparkling wine a slight complexity and earthiness to the palate.
