Description
WINEMAKING
The fruit was picked in the cool of night and fermented in open fermenters using gentle extraction techniques to maximise colour and flavour but minimise tannin extraction. Once primary fermentation completed and the base wine fined and filtered, the second in-bottle fermentation (tirage) is conducted. The bottled wines are left on lees for 12 months before disgorging and topping

Great pairing with chocolate and sweet deserts. Try a traditional Christmas approach with turkey and cranberry sauce.
VINTAGE NOTES
The sparkling Shiraz is a non-vintage wine as we hold back small amounts of previous vintages to blend into the main vintage to give the sparkling wine consistency of style, complexity and earthiness to the palate
